Fish tacos are good but they are NOT Tex-Mex. Frito-pie is great, if messy. It is nothing like California Mexican food. Among other wee little cultural differences. :)
One joking reference with a deep underlying truth is the dialog about families that were "from Texas" before the US state of Texas, or the Independent nation of Texas, or the Mexican Territory of Texas, or the New Spain Colony of Texas ... ever existed.

Yup. A Tejano neighbor investigated his family roots, and found out that he was descended from a Converso (converted to Christianity,most likely forced, from Judaism) from Monterrey. (Aside: Is it just coincidence that Mexico has a ton of jokes about tightwad, money-obsessed Monterrey people? Or that Monterey is the heartland of entrepreneurs in Mexico..?)(old Mexican saying: if anything in Mexico gets done, someone from Monterey is involved)
At the same time, California also has Hispanics with roots in California before it became a state. A cousin in LA had an elementary school teacher name of Miss Sepulveda who was descended from the Sepulveda who once owned a substantial part of Los Angeles via land grants from the Spanish king. There is a Sepulveda Boulevard in LA.
A tech guy moved from San Diego to Austin, and a year later moved back to California. His posting on his experience in Austin got a lot of attention. His comments about Texas heat, compared to California, are accurate. Eight nine degrees at midnight happens more than one would want. But complaining that his kids could play outside only 3-4 months a year was absurd. His update is worth reading- he admits that some of his complaints are related to purchasing an outsize house and locating in the far suburbs without sufficient research. His initial article didn't get a good reception in Texas.
