I've had MREs. They aren't all that bad. I've had K-rats, too. MREs were an improvement.
Not sure I'm interested in something that sits and "ferments" for three years, though, even if it might be safe to eat. That sinks right down to the level of balut, which isn't seriously aged, but aged enough.
I ate quite a few MREs during the Iraq days. Not by preference; and to be clear, the Army went to a great deal of trouble to try to feed its soldiers better than that. Most FOBs had a real DFAC; some of the big ones had multiple ones. Victory Base had quite a few, including one that was run by the USAF and served much better fare (including steak and lobster).
But when you were out in the field or stationed for a while at a Combat Outpost, you might be eating MREs or other pre-packed food. The MREs tasted worse than the pre-packed sandwiches, which were much like third-tier gas station fare and not that good either. But the MREs had plenty of calories, which was the real upside to them. Each one had thousands of calories to help you get through your work that day.
