The Heart of a Bull


Peruvian cuisine tonight. The waitress carefully explained to me, after I ordered it, that it would be the actual heart of an animal. It was delicious.

I don't understand why people are hesitant to eat organ meat like hearts. So long as it is well prepared and cleaned, it tastes very good. (Which is true of all other cuts of meat.)

Full disclosure: I'm a fan of black sausage, haggis, menudo, and other dishes.

Our youngest daughter has made a tradition of preparing anticuchos de corazón for Christmas.

I've always been squeamish about squishy organ meat. I know it's silly, but squeamishness doesn't care what you think. Heart is just muscle tissue, though, and doesn't provoke the same response, any more than tongue does.

In my postbaccalaureate backpacking trip to South America (Colombia to Bolivia), Peru had the best food. There was seafood (ceviche), lots of Chinese restaurants (chifas), and what I would call traditional Andean(mountain) food. Some excellent street food, such as rocotos rellenos (stuffed peppers w the hot part mostly taken out), and anticuchos (hearts, as above).

In all Latin America, Mexico and Peru are neck-and-neck for best food. Which reminds me of a trip my sister and I took to Miami. We went to Calle Ocho, thinking we would find a good Cuban restaurant. Nothing-- which is what the Colombian taxi driver told us we would find. More pawnshops than restaurants. We did find a Honduran restaurant. It did as well as what I recall from Honduras, and the prices were appropriate for a family restaurant in a poor section of town.
